Jalapeño Popper Mac and Cheese

Get your protein and fulfill your cravings for something savory with this low-carb spin on mac and cheese. Creamy and filling, this easy dinner idea takes less than 30 minutes to prepare.


Real Good Foods Jalapeño and White Cheddar Chicken Poppers
1 large head of cauliflower
1 tbsp olive oil
1 ½ c heavy cream
1 c shredded cheddar cheese
½ c cream cheese
1 small jalapeño, finely diced
½ tsp onion powder
½ tsp garlic powder
Salt and pepper to taste


Preheat oven to 400 F and prepare a baking sheet with parchment paper.

Cut the cauliflower into small florets. Toss the florets in olive oil and and arrange them on the baking sheet. Bake for 10-15 minutes or until tender and roasted. Remove and place the poppers on the baking sheet. Cook according to instructions.

Meanwhile, place the heavy cream, jalapeño, onion, and garlic powder into a sauce pan and turn on high heat. Bring to a boil and then reduce to a simmer. Add in the cheddar and cream cheese. Stir until melted and smooth. Add salt and pepper to taste. Toss the florets in the cheese sauce and top with poppers.
